Dahl Curry with Coconut Milk
Dahl Curry with Coconut Milk accompanied with some steamed rice is truly nourishing and amazingly delicious meal served with a few accompaniments such as pickles, chutneys, raita and papadums. Lentils are a great way to create a purely vegetarian meal that keeps you sustained for longer.
Serves 6 people
Ingredients
200g mysore dahl
1/8 teaspoon ground turmeric
3 tablespoons peeled and very finely sliced shallots
1 teaspoon ground cumin seeds
3-4 whole fresh green chillies cut down the middle lengthways with the seeds removed. Adjust number based on your tolerance for heat
4 tablespoons of vegetable oil or 2 tablespoons of ghee
1/2 teaspoon of whole black mustard seeds
10-12 fresh or dried curry leaves
1-2 whole dried chillies broken into small pieces
2 cloves garlic peeled and finely chopped
150g of finely chopped tomato
3/4 to 1 teaspoon of sea salt
300ml tinned or fresh coconut milk
Method
- Wash the mysore dahl under cold water several times to pick out any impurities.
- Place the washed mysore dahl into a heavy bottomed pot with 900ml of water and the ground turmeric.
- Place on a medium heat to boil and then place on a low simmer with the lid slightly ajar.
- Simmer for approximately 45 minutes ensuring you skim the impurities.
- After dahl is starting to breakdown add the 1 tablespoon of the shallots, ground cumin and green chillies . Cook for a further 10 minutes. Add more water if the dahl is too thick in consistency.
- In a seperate fry pan add the mustard seeds into the oil, with 2 tablespoons of sliced shallots, garlic, curry leaves and the whole dried chillies that have been broken into pieces. Once everything is fried for a few minutes add the chopped tomatoes and fry for a few minutes.
- Add this fried mixture into the dahl pot and combine delicately as not to break up things too much.
- Lastly add the coconut milk, sea salt and simmer for a few minutes making sure the dahl is not sticking to the bottom of the pan.
- You can cook this dahl several hours in advance and reheat it.
